The group's principal activity is to provide food for breakfast and lunch. The food items include fresh baked goods, made-to-order sandwiches, soups, salads, custom roasted coffees and other cafe beverages. The group operates in three reportable business segments: company store operations, franchise operations and commissary operations. As of 27-Dec- 2003, the group's retail operations consist of 173 company-owned bakery-cafes and 429 franchise-operated bakery-cafes. The franchise operations segment comprises the activities of the franchise business unit which licenses qualified operators to conduct business under the panera bread group name and also monitors the operations of these stores. The commissary operations segment supplies fresh dough items to both group-owned and franchise operated bakery cafes.
