Matthew McMillin is the Executive Chef/Partner and Vice President of Culinary for Big Bowl Restaurants.
McMillin joined the Lettuce Entertain You family in 1993, opening a number of concepts. McMillin joined the Big Bowl team in 1995, helping to develop it from a single unit concept to the eight restaurants operating today.
Before joining Lettuce Entertain You, McMillin graduated form Kendall College at the top of his class and received the Escoffier award for Culinary and Academic Excellence. During school and after, McMillin worked at many fine French Restaurants such as Carlos, Le Francais and Café Provencal.
At Big Bowl, McMillin works on menu development and he oversees Big Bowl’s team of Concept Chefs. McMillin also has worked in a training capacity at the Mandarin in San Francisco and Mandarette in Beverly Hills, and has traveled to Singapore, Hong Kong and Thailand for inspiration and increased knowledge of Asian culture and culinary traditions.
McMillin and fellow Big Bowl partner Bruce Cost recently co-wrote Big Bowl Noodles & Rice, a Harper Collins publication. This book is a collection of appetizers, noodle dishes and stir-frys for the home cook, adapted from the menu and specials of the popular Big Bowl restaurants.
