Mark Dorian, is the Vice President and Executive Chef at one of Lettuce Entertain You's newest concepts, Petterino's, located at 150 North Dearborn nestled in the heart of the Chicago Theater District. Mark joined LEYE in 1994, bringing over 20 years of experience in the restaurant and hospitality industry to the Petterino's team.
A native of New York City, Dorian began his career at the world renowned Greenbrier Apprenticeship Program in West Virginia. "I liked to work with my hands and cooking gave me a feel to fuel my creativity with bringing me a different set of challenges each day," Mark explains. After studying at Greenbrier, Mark trained in Paris and Entibes in France. He spent the next five years developing his skills and passion for cooking in the kitchen of New York's Union Square Café as executive sous chef. Upon moving to Chicago, Dorian has been with LEYE for over 8 years working at Un Grand Café, Papagus, Brasseire Jo and Petterino's.
Dorian prides himself on his dedication to a simple and elegant menu by taking his time in the kitchen to create fresh, classic dishes that are done right. Constantly finding ways to improve, he strives to make each dish the best by using different ingredients each day. "I consider myself a walk-in chef...I let the ingredients tell me how to cook them," comments Mark. His role as Executive Chef is to ensure the integrity of Petterino's through management of every aspect of the restaurant's operations - from the creation and maintenance of all menus and recipes to the preparation, presentation and service of the actual menu items.
Mark is married with four beautiful daughters currently reside in one of Chicago's West suburbs. With a table always set for six, Mark enjoys cooking at home, his favorite place to eat, and entertaining his friends and family. |
