Extensive knowledge, a passion for health and wellness and an immense talent for culinary creativity explain Sea Island Wellness Chef Laurie Erickson’s great success in her 25 years of professional cooking. She began cooking and creating recipes at a very young age with her grandmother who passed along valuable knowledge about medicinal herbs, herbal remedies and organic gardening.
Chef Laurie’s enthusiasm for the culinary world continued to grow as she studied dance at the Boston Conservatory. Her instructor introduced her to the importance of food and energy and their influence on her performance.
Erickson studied Nutrition, Exercise Physiology and Communications at Assumption College and Northeastern University. Chef Laurie apprenticed in several fine dining restaurants throughout New England and also worked as a chef during college. Her gift for inspiring people to cook became apparent while teaching cooking techniques to guests at Canyon Ranch in the Berkshires of Massachusetts.
One of her first noteworthy accomplishments was starting her own business, Holistic Fitness Center, a center for Health, Fitness and Wellness. Since then, her recipes have appeared in Family Circle Magazine, The Boston Globe, Spa magazine, People magazine’s new publication Your Diet, Canyon Ranch Cooks and Restaurant News. Her work has also been featured on NBC’s Today Show, PBS and the Travel Channel’s Epicurious. Chef Laurie most recently created recipes and cooking tips for the New York Times top-selling hot new book, Ultra-Metabolism.
She enjoys staying informed with the latest news and nutrition information by reading and referring to her huge collection of cookbooks, reference manuals, and journals. |
