Laura Cray serves as National Director of Food and Beverage. Ms. Cray is responsible for monitoring and evaluating the food and beverage operation at Company facilities. She serves as an internal resource to our General Managers and Regional Directors in the areas of food and beverage cost control, budgeting, forecasting, labor planning, training, operating policies and procedures. Prior to her current position, Ms. Cray served as the Director of Food and Beverage at multiple properties during her 13 year career with KemperSports. In her most recent role at Bolingbrook Golf Club, Ms. Cray was responsible for the development and implementation of both restaurants and the banquet facilities located within the 76,000 square foot clubhouse. As part of the development team at Bolingbrook, Ms. Cray was responsible for all equipment bids, purchasing, menu concepts, kitchen design, staff training, and advance event sales resulting in over $2M prior to club opening. In the past five years at Bolingbrook, she managed the everyday F&B operation generating over $4.7M in revenues. |
