Guy C. Kathman has been Shells Vice President of Operations since joining the company in September 2003. A 25-year veteran of the restaurant business, he has worked with a variety of industry leaders. Before joining the Shells leadership team Mr. Kathman spent two years as Managing Partner & General Manager of Posados Café, a regional Texas chain where he had a small ownership stake. From 1997 to 2001, Mr. Kathman was responsible for several restaurants as Regional Director at Brinker International’s On the Border Restaurants. Prior to joining Brinker, Mr. Kathman served three years as a Dallas-based Area Director for Darden Restaurants’ Red Lobster chain. He previously spent five years as Area Director of Operations for El Chico Restaurants, then a 100-unit Mexican chain. Mr. Kathman has held a broad variety of restaurant management posts during his career, also working with such companies as TGI Friday’s, Cactus Bar and Grill, and Gershwin’s. He has opened more than 35 restaurants. Since joining Shells, Mr. Kathman has implemented many procedures and policies designed to elevate operational excellence across the chain, from a new service training and certification process to improved sanitation and quality standards. Through his direction a new test store format was put in place allowing for regional food development and testing, allowing Shells to smoothly test and roll out new menu items. Mr. Kathman is a graduate of Old Dominion University in Norfolk, Va.
