Daniel D. Gallaher, Ph.D. is associate professor, Department of Food Science and Nutrition, and Associate Dean of Undergraduate Programs, in the College of Human Ecology, University of Minnesota, St. Paul. Dr. Gallaher is a member of numerous professional associations including the American Society for Nutritional Sciences, Institute of Food Technology, Society for Experimental Biology and Medicine, and the American Association for the Advancement of Science and is on the editorial board of the Journal of Nutrition.
Dr. Gallaher's research interests include dietary influences on colon cancer and cholesterol metabolism, dietary fiber, dietary fat, bile acid metabolism, and dietary treatment of diabetes and chronic pancreatitis. Dr. Gallaher is widely published in book chapters, symposia proceedings and peer-reviewed journals including the Journal of Nutrition, Lipids and Cereal Chemistry.
Dr. Gallaher holds several patents on carotenoid extraction and lowering blood cholesterol levels using water-soluble high viscosity cellulose ethers. Dr. Gallaher received his Ph.D. in Nutrition Science from the University of California, Davis. |
